On a food line, the most common cause of controller and HMI failure is the cleaning crew, not the production crew. High-pressure hot water at 80 °C, caustic foam cleaners, chlorine and peracetic acid hit every surface several times a day — and office PCs, commercial panels and even IP65-rated "industrial" boxes die here in weeks, costing 40+ minutes of line time per failure.
This guide covers what washdown actually does to computers, the IP rating ladder from IP65 to IP69K, the hygienic design checklist, and how to match hardware to each cleaning zone in a food or beverage facility — so the HMI and edge-AI node survive the hose as long as the motor does.
Four failure mechanisms, in order of frequency: ingress — water finds every vent, fan, button and gasket seam, and pressure washing turns pinholes into floods; thermal shock — a chassis at 60 °C hit with cold water warps seals and cracks conformal coatings; chemical attack — alkaline cleaners degrade paint, plastics, labels and standard cable jackets; and condensation — a sealed box that cools after a hot wash pulls humid air in through breathing points, and moisture condenses on the PCB. A washdown computer therefore needs to be sealed and breathe-free: no vents, no fans, no membrane keyboards, no standard RJ45 sockets pointing up.

Two realities to plan around. IP69K is a spray test, not a sterilization claim — it proves the enclosure survives the wash cycle, not that it is sanitary after it. And sealed is not forever: gaskets and cable glands age, so washdown hardware needs a scheduled re-torque and seal-inspection interval.
Line-side box PCs run the vision and control logic. AI on the line: defect detection, label verification and foreign-object cameras need real compute. Because a sealed washdown box cannot take add-in GPUs, size the CPU's integrated graphics for light inference (Ryzen Embedded V2000/V3000-class Radeon, or Intel Iris Xe), run heavier models on a Jetson-based node or GPU server mounted in a dry electrical room, and push results over the network to sealed line-side terminals. For multi-camera inspection, keep the AI box dry and the HMI wet — not the other way around.

The money-saving rule: match the IP rating to the zone's actual cleaning schedule, then add one class of margin. IP69K on a dry-pack line wastes budget; IP65 in a CIP zone guarantees a repeat purchase in six months.
